Know your limits

Late last Saturday afternoon, my wife decided to try the new organic juice (imagine apple, cucumber, romaine, celery, kale and chard...all mixed together!) place that just opened.

No go. Closed.

Sunday afternoon, closed again.

So she emailed the owner, who explained that he was only open from 10 am to 2 pm.

Huh? I mean, it's HOT, and - logically - you'd think that staying open during the warmest hours of the day would be profitable.

On Monday, determined to get her juice, my wife goes over just after noon. And finds a crowd of spandex-clad women who, she learns, have just finished a yoga class.

This business-savvy owner has determined the right offering, at the right time and at the right place.

His healthy juices appeal to his priority customers, who take their yoga class nearby. He incurs no unnecessary operating expense by staying open longer. The hours are even a recruiting advantage - moms can drop off their kids for a couple hours at school or daycare, earn some money, and interact with age-group peers.

And he has time for other pursuits.

Experience matters.
