What are you paying for?

I can't stand most Chinese restaurant food.

Yes, I'm spoiled. I spent two years in China and had really, really good Chinese food. Here, despite the sometimes attractive decor, all the sauces taste the same (and they're all bought in gallon jugs from the same distributors...), the food is too sweet, and the dishes have names that don't exist in China.

So, how do we pick? Easy.
We go where the Chinese go. And we listen - if I can't understand the diners' conversations, we take a chance.

And are rarely disappointed.

These restaurants are noisy, simply or even plainly decorated, and crowded. The service is often spotty. But the food can be marvelous.

Why? These restaurants understand - and attract - a demanding clientele, and craft the entire dining experience around their needs. It won't be the same as a leisurely five-course meal in an elegant French restaurant.

But that's the point. Each experience has a cost, built into the price.

Client focus matters.
